And So It Begins
On September 7th I took the train to my doctor’s office at the Corinne Goldsmith Dickinson Center in New York for my first meeting with a nutritionist, a neurologist, and 4 other women who have relapsing remitting MS.
Bottom line: no dairy – no meat other than fish – no refined sugars – limited sodium.
No eating for 12-hours a day.

Eggs are fine.
Coffee is fine.
I’m calling it the Pesceggatarian (pess-keg-uh-tair-ee-uhn) diet.
They are calling it the Multiple Sclerosis Mediterranean Diet.

On day one I was pretty much hungry all day, but into the challenge – although I was unprepared...
During days three through five I was mostly hangry but figuring it out.
Yesterday I was hungry a lot, but nourished and easily sated.
It’s day seven.
I slept for eleven or twelve hours last night.
I feel like my vision is sharper than it has been in years.
I’m not cranky.
I’m focused.
I’m feeling emotionally stable.
I still have worry lines between my eyebrows, but the outer corners of my eyes have turned back up.
This afternoon I stopped by my friends’ Sarah and Steve’s to drop off a canary melon from one of the Cold Spring Farmers’ Market’s produce vendors. I was eating one of the paleo freezer bars they bought me and we got to talking about food (which also happens to be what our friendship is founded on) and how I’m feeling today.
Steve mentioned the 7 stages of grief. In jest he suggested that I am now in the denial phase.
Upon a quick Google search, I’m thinking perhaps I’m now in the phase of Acceptance and Hope!
I just finished preserving a batch of salsa. I'm still working on my own recipe, but in this case I quintupled the batch and made some minor adjustments.
